Make the most of passionfruit season with this delightful gin fizz.

You will need: 

• Pulp of 1 passionfruit
• 5 fresh raspberries
• 1 1/2 parts gin
• 1/2 part raspberry syrup or cordial
• 1/2 part lemon juice
• 1/2 part egg white
• Soda & ica

To make:

1. Muddle the raspberries in the bottom of a cocktail shaker
2. Add ice, gin, syrup or coridal, lemon juice, egg white and passionfruit pulp
3. Shake vigourously
4. Pour over ice and top with soda
5. Garnish with passionfruit / raspberries
6. Enjoy!
