Take advantage of in season kiwifruit and include them in your spring entertaining.

  1. Make a mint syrup by bringing ½ cup each of water and sugar to a boil. Remove from the heat and add mint.
  2. Muddle a few mint leaves with mint syrup
  3. Fill a shaker with ice, then add 60ml rum, squeeze of lime juice and pureed kiwifruit.
  4. Shake vigorously and strain into an ice-filled glass.
  5. Enjoy!
